Vegetable Stew

Vegetable Stew is a traditional Kerala dish served with appam or idiyappam. This stew is made with mixed vegetables and fresh coconut milk.

Prep
  1. Rinse & cut vegetables (carrot, beans & potatoes).
  2. Chop option & green chillies
Method
  1. Heat coconut oil in kadai, sauté whole spices (cloves, cinnamon, cardamom & bay leaf) for few seconds.
  2. Add the onions, curry leaves, green chillies, ginger & garlic. Sauté well till onion turn translucent.
  3. Add cut vegetables, thin coconut milk, salt & pepper powder. Cover & cook till vegetables are soft.
  4. Open the lid, check seasoning and add thick coconut milk. Simmer for few minutes.
  5. Do not boil the stew after adding the thick coconut milk.
  6. Mash few pieces of potatoes to add thickness to the gravy.
  7. Serve hot with appam or idiyappam.
