Sabudana Vada | Sago Potato Patties

Sabudana vada is traditional dish of Maharashtra & is often served with curd or green chutney. This is a crispy delicious snack made by deep frying Sabudana & Potato spice patties.

Sabudana Vada
  1. Wash & soak sabudana in enough water for 4-5 hours or overnight. After soaking time is over sabudana must have soaked up all the water and will be looking very nice and puffy.
  2. Boil Potatoes, peel the skin & mash.
  3. Take roasted peanuts in blender & make it a coarse powder.
  1. Take soaked sabudana, mashed potatoes, coarse peanut powder, green chillies, coriander leaves, jeera, lime juice, sugar & salt in a bowl.
  2. Mix them well. The dough should be stiff so you can make patties.
  3. Divide the dough into equal portions & make them into round patties.
  4. Now heat oil in frying pan on medium to high heat for deep frying
  5. Once oil is hot, slide sabudana vada patties into hot oil.
  6. Deep fry them till they turn golden brown in colour from all the sides. Do stair occasionally.
  7. Once they are fried till golden brown, take them out and drain on paper towel.
  8. Serve hot with green chutney or curd.
