Methi Pulao | Green Fenugreek Rice

Methi Pulao is healthy rice dish made from methi leaves and few basic spices. This is not only healthy but quick and easy to make.

Prep
  1. Wash & soak Basmati rice in 1 cup water for 30 min.
  2. Grind all ingredients listed under “Masala paste” to smooth paste & set aside.
  3. Cut onion lengthwise. Wash & cut methi (fenugreek) leaves.
Method
  1. Heat Ghee & oil in a kadai. Sauté whole spices (Bay leaf, cloves, cinnamon, cardamom) on a medium flame for few seconds.
  2. Add thinly sliced onions & sauté until the onion turn golden brown.
  3. Add methi leaves & sauté till they wilted.
  4. Add grinded masala paste & green peas, sauté for 3-4 minutes.
  5. Add water (approx. 1 cup) which is used to soak basmati rice, wait until it comes to boil and add salt as required.
  6. Now add coconut milk & rice, wait until it comes to boil.
  7. Close the kadai with lid, let it cook in low flame for 15 min. (if you are using the pressure cooker, close the lid & don’t put the whistle, let it cook in low flame for 15 min)
  8. After 15 min let it cool for 5-10 min & mix gently.
  9. Serve hot with your favourite raita or plain curd.
